Pumpkin cinnamon sugar donuts, perfectly soft, very easy..
Ingredients
Donuts:
2 eggs
½ cup vegetable oil
½ cup granulated sugar
1 teaspoon baking powder
½ cup pumpkin puree
½ cup milk
1 teaspoon cinnamon
2 cups all-purpose flour
Cinnamon-sugar coating:
¼ cup unsalted butter, melted
½ cup granulated sugar
1 teaspoon cinnamon
Instructions
Preheat oven to 350 F. Spray a donut pan with cooking spray
In a large bowl, beat the vegetable oil, eggs, sugar, pumpkin, milk, cinnamon and baking powder until smooth and well combined. Add the all-purpose flour and stir until just combined.
Fill the wells of the donut pans about ¾ full. Bake donuts 12 to 15 minutes, or until a toothpick inserted comes out clean
Remove from oven, let cool for 5 minutes, then remove donuts from pan.
While the donuts are cooling, melt butter in one bowl and combine the sugar and cinnamon in another. When donuts are still hot, use a pastry brush to spread a thin layer of butter onto each donut before dipping each into the cinnamon sugar, then roll them in the cinnamon sugar mixture; repeat until all donuts have been covered.
Let cool completely.
These donuts are best eaten the day they are made.
