Ingredients
8 oz softened cream cheese
1 tablespoon Butter, softened
4 cups powdered sugar
1 cup coconut, shredded
2 cups Semi-Sweet Chocolate Chips
1 tablespoon shortening
Chocolate syrup
Instructions
Line a half baking sheet with parchment paper, set aside
In a medium bowl, using a hand mixer beat cream cheese and butter until blended
Add powdered sugar and coconut and stir well until incorporated
Refrigerate for about 1 hour or until easy to mold with hands
Dust your hands with powdered sugar and mold coconut mixture into egg shapes
Place coconut egg on parchment paper, do the same with the rest of the coconut mixture
Place in the freezer for 1 hour or until eggs are firm
Melt chocolate chips and shortening in the microwave by heating for 30 seconds then stirring and repeating process until it is melted and smooth
Using a fork, dip egg into chocolate and flip to cover completely
Tap the fork on the edge of the bowl or place them on a rack to remove the extra chocolate
Place back on parchment paper
Refrigerate until chocolate has set
Drizzle chocolate syrup onto each egg if you desired
