Garlic Mushroom Quinoa Recipe

- 1 pound cremini mushrooms, sliced thinly
- 2 cups quinoa cooked
- 1 tablespoon olive oil
- 4 cloves garlic, minced
- Salt and pepper, to taste
- ½ teaspoon dried thyme
- 1 tablespoon grated Parmesan
- Heat olive oil in a large skillet over medium-high heat
- Add mushrooms, garlic and thyme and cook over medium-high heat about 5 minutes, stirring occasionally until mushrooms get soft and golden brown
- Season with salt and pepper and mix
- Add cooked quinoa to the skillet and cook on low heat for another minute until quinoa warms up
- Garnished with Parmesan, if desired and serve warm
