Easy Candy Corn Madeleine Recipe

Serves: Makes 20 madeleine
- 2 eggs
- ¼ cup unsalted butter, melted
- ½ cup granulated sugar
- 1 teaspoon vanilla extract
- Lemon zest from half of the lemon
- Pinch of salt
- ½ cup all-purpose flour, sieved
- Orange food coloring, optional
- Yellow food coloring, optional
- Powdered sugar, optional for dusting
- Preheat oven to 375 degrees F. Grease the madeleine pan with butter and dust with flour, set aside
- Melt butter, set aside to cool to room temperature
- In a medium bowl, beat eggs, vanilla extract and salt until frothy
- Gradually add sugar while beating for 3-5 minutes, until mixture is thick (mixture will form ribbons when beaten is lifted)
- Fold in the flour and use a spatula to mix well
- Add lemon zest
- Pour melted butter over batter and gently stir and blend until combined
- Divide the batter into 3 equal parts
- Leave on a part the original madeleine batter
- Add 2-3 drops of orange food coloring to the one part of the batter, mix well until the desired color
- Add 2-3 drops of yellow food coloring to the remaining batter, mix well until the desired color
- Pour each colored portion of batter into a separate ziplock baggie
- Fill colors into 3 sections in the madeleine pan ( fill a little at the time of each color, don't spread it)
- Bake about 10-12 minutes until puffed and edges of the madeleine are light brown
- Let the madeleine cool in the pan for a few minutes then gently remove them from pan and let cool on a cooling rack
- Dust with powdered sugar and serve
