Ingredients
1 cup heavy whipping cream
1 ½ cup cottage cheese
1-2 teaspoon liquid stevia (optional)
1 teaspoon ground cinnamon
½ teaspoon vanilla powder (vanilla extract)
2 oz fresh blueberries (or other berries)
Instructions
Whip the heavy cream until soft peaks form. Add vanilla powder and stevia.
With a spoon add cottage cheese and mix gently until combined, but not overmixed.
Sprinkle with cinnamon and let the pudding settle about 10 minutes in the refrigerator.
Serve with blueberries.
