Pumpkin Cinnamon Sugar Donuts Recipe

Pumpkin cinnamon sugar donuts, perfectly soft, very easy..
  • 2 eggs
  • ½ cup vegetable oil
  • ½ cup granulated sugar
  • 1 teaspoon baking powder
  • ½ cup pumpkin puree
  • ½ cup milk
  • 1 teaspoon cinnamon
  • 2 cups all-purpose flour
Cinnamon-sugar coating:
  • ¼ cup unsalted butter, melted
  • ½ cup granulated sugar
  • 1 teaspoon cinnamon
  1. Preheat oven to 350 F. Spray a donut pan with cooking spray
  2. In a large bowl, beat the vegetable oil, eggs, sugar, pumpkin, milk, cinnamon and baking powder until smooth and well combined. Add the all-purpose flour and stir until just combined.
  3. Fill the wells of the donut pans about ¾ full. Bake donuts 12 to 15 minutes, or until a toothpick inserted comes out clean
  4. Remove from oven, let cool for 5 minutes, then remove donuts from pan.
  5. While the donuts are cooling, melt butter in one bowl and combine the sugar and cinnamon in another. When donuts are still hot, use a pastry brush to spread a thin layer of butter onto each donut before dipping each into the cinnamon sugar, then roll them in the cinnamon sugar mixture; repeat until all donuts have been covered.
  6. Let cool completely.
  7. These donuts are best eaten the day they are made.
