Strawberry Oreo Cheesecake Bars Recipe

These NO BAKE Strawberry Oreo Cheesecake Bars have a Golden Oreo cookie crust, a creamy cheesecake filling and a homemade strawberry sauce on top. Easy, fun and delicious summer dessert!
Ingredients
For the crust:
  • 2 ½ cups Golden Oreo cookie crumbs, about 26 Oreo cookies
  • 6 tablespoons unsalted butter, melted
For the cheesecake:
  • 16 oz. cream cheese, softened
  • 1 cup powdered sugar
  • 2 cups heavy cream
  • 1 teaspoon vanilla extract
For the Strawberry sauce:
  • 2 tablespoons water
  • 2 tablespoons cornstarch
  • 2 cups strawberries , hulled and chopped small
  • 1 cup granulated sugar
  • 1 tablespoon lemon juice
For Garnish:
  • Golden Oreo, crushed optional
Instructions
To make crust:
  1. Finely crush the cookies in a food processor, add melted butter and blend until it is all moistened
  2. Press crumb mixture onto bottom of the prepared 9x9-inch square pan with aluminum foil leaving an overhang on each side for easy removal. Lightly grease the edges of the pan with cooking spray, set in the freezer to firm while making cheesecake layer
To make cheesecake filling:
  1. In a medium bowl, mix cream cheese and sugar until smooth and creamy, set aside
  2. In separate bowl whip heavy cream until soft peaks form add vanilla extract and continue mixing until stiff peaks form
  3. Add cream cheese mixture into beaten heavy cream and mix on low speed just to combine
  4. Spread cheesecake filling over the crust
  5. Set in the fridge to firm
  6. Refrigerate for at least 3-4 hours or until set
To make strawberry sauce:
  1. Combine water and cornstarch together to make a slurry and add to a medium saucepan.
  2. Add sugar and strawberries and set over medium high heat. Bring to a boil and then simmer for about 10 minutes. During this time the strawberries will release their juices and then thicken slightly.
  3. Stir in lemon juice.
  4. Use a slotted spoon to scoop strawberries out of the saucepan and spoon on top of the cheesecake into an even layer. Some liquid will still be in the pan once you've removed all the strawberries, discard
  5. Set in the fridge to firm
  6. When the cheesecake is completely set, pull the overhang of the foil to lift the cheesecake from the pan and transfer onto cutting board
  7. Cut and garnish with crushed Golden Oreo
  8. Serve
