Garlic Mushroom Quinoa Recipe

GARLIC MUSHROOM QUINOA - a simple, healthy and gluten free side dish ready in 15 minutes.
  • 1 pound cremini mushrooms, sliced thinly
  • 2 cups quinoa cooked
  • 1 tablespoon olive oil
  • 4 cloves garlic, minced
  • Salt and pepper, to taste
  • ½ teaspoon dried thyme
  • 1 tablespoon grated Parmesan
  1. Heat olive oil in a large skillet over medium-high heat
  2. Add mushrooms, garlic and thyme and cook over medium-high heat about 5 minutes, stirring occasionally until mushrooms get soft and golden brown
  3. Season with salt and pepper and mix
  4. Add cooked quinoa to the skillet and cook on low heat for another minute until quinoa warms up
  5. Garnished with Parmesan, if desired and serve warm
