EASY BANANA CAKE - It's soft, sweet with the perfect amount of banana and it's topped with cream cheese frosting! This amazing Banana Cake will take your breath away!
Ingredients
For cake:
½ cup butter, softened
1 cup granulated sugar
2 eggs
1 cup buttermilk
1 teaspoon baking soda
Pinch of salt
1 teaspoon vanilla extract
3 ripe medium bananas
2 cups all-purpose flour
For cream cheese frosting:
½ cup butter, softened
8 oz cream cheese
1 teaspoon vanilla extract
2-3 cups powdered sugar
4-5 tablespoons heavy whipping cream
Instructions
To make cake:
Preheat oven to 350 degrees and grease a 9x13 inch pan
In a medium bowl, mash bananas with a fork, set aside
In a large bowl, beat together butter and granulated sugar until combined
Add eggs one at a time, buttermilk and vanilla, mix together until combined and creamy
In a separate bowl, add flour, baking soda and salt and whisk
Add it into wet ingredients and stir just until combined
Add mashed bananas and gently stir together with spatula
Spread batter into prepared pan
Bake for 35-40 minutes or until toothpick inserted in the center comes out clean
Remove from oven and let cake cool completely before frosting
To make cream cheese frosting:
In a medium bowl, beat together butter and cream cheese until smooth and creamy
Add vanilla extract, powdered sugar a little at the time and heavy cream, beat together until you reach desired consistency (add more powdered sugar or heavy cream until desired frosting consistency is reached)
Spread the frosting on the cooled cake garnish with banana slices and chopped pecans or walnuts if you desired
Refrigerate for 30 minutes before serving
Notes
The cooking time on this cake can vary, mine takes about 40 minutes. The cake is done when a toothpick inserted in the center comes out clean. If you find the top of the cake is browning too quickly in the oven, loosely cover it with aluminum foil.
