Gingerbread cookies are a classic holiday treat, filled with warm spices and sweet molasses. Magical cookies perfect for the holiday season!
Ingredients
  • INGREDIENTS:
For Gingerbread Cookies:
  • 2 ¾ cups all-purpose flour
  • 1 ½ teaspoons ground ginger
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground cloves
  • ¼ teaspoon ground nutmeg
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup (1 stick) unsalted butter, softened
  • ½ cup brown sugar, packed
  • ½ cup molasses
  • 1 large egg
  • 1 teaspoon vanilla extract
For Icing:
  • 2 large egg whites
  • 3 cups powdered sugar, sifted
  • ½ teaspoon cream of tartar
Instructions
  1. Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a medium bowl, mix dry ingredients whisk together flour, ginger, cinnamon, cloves, nutmeg, baking soda, and salt.
  3. In a large bowl, beat the softened butter and brown sugar until light and fluffy (about 2-3 minutes).
  4. Add molasses, egg, and vanilla extract, and beat until combined.
  5. Gradually add the dry ingredients to the wet mixture, mixing until a dough forms.
  6. Roll out the dough: Lightly flour a clean surface and roll out the dough to about ¼ inch thick.
  7. Use star-shaped cookie cutters to cut out the cookies. Place them on the prepared baking sheets, about 1 inch apart.
  8. Bake in the preheated oven for 10-12 minutes, or until the edges are firm and slightly golden
  9. Allow the cookies to cool on the baking sheets for 5 minutes, then transfer them to a wire rack to cool completely.
To make Icing:
  1. In a large bowl, beat egg whites with an electric mixer until soft peaks form. Gradually add powdered sugar and cream of tartar, continuing to beat until the icing is smooth and glossy.
  2. If the icing is too thick, add water, 1 teaspoon at a time, until you reach your desired consistency. If it's too thin, add more powdered sugar.
  3. Transfer the icing into a zip-lock bag and cut off the small corner or use a piping bag with a small round tip. Drizzle the icing onto cooled cookies.
