Soft and tender strawberry sheet cake topped with fresh strawberry buttercream frosting, perfect for parties or Valentine’s Day!
Ingredients
For the Cake:
16 oz strawberries rinsed and with tops cut off
1 box white cake mix
3 eggs
¾ cup vegetable oil
3 oz strawberry jello mix
For the Strawberry Frosting:
¼ cup unsalted butter softened
4 oz cream cheese softened
1 teaspoon vanilla extract
3 cups powdered sugar
¼ cup strawberry puree
Instructions
To make cake:
Preheat oven to 350°F. Grease and flour a 9x13 inch baking pan
Add strawberries to a blender or food processor and blending, (you will need 1 cup of pureed strawberries for the cake batter, plus an additional ¼ cup of pureed strawberries for the frosting) Set aside
In a large mixing bowl, whisk the cake mix, eggs and oil until well combined.
Add JELL-O powder and 1 cup strawberry puree, mix well.
Pour the batter into a greased 9×13 prepared pan. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean
Let the cake cool.
While the cake is cooling, make the frosting.
To make frosting:
Beat together the butter and cream cheese until smooth and creamy
Add vanilla, powdered sugar, and strawberry puree and mix until smooth and fluffy
Spread the frosting evenly over the top of the cake and refrigerate for at least 1 hour
Add fresh sliced strawberries on top of the cake if desired, sliced and serve
