Healthy tuna pasta salad with Greek yogurt dressing, corn, red peppers, and fresh herbs served in a bowl, makes a quick and easy meal!
Ingredients
For Salad:
  • 8 oz uncooked pasta, such as rotini
  • 6,5 oz cans tuna, drained
  • 1 cup corn, thawed
  • 1 cup diced red capsicum
  • ½ cup diced red onion
For Yogurt dressing:
  • ⅔ cups plain Greek yogurt
  • ¼ cup fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 2 garlic cloves, minced
  • 3 teaspoons minced parsley
  • Salt and pepper, to taste
Instructions
  1. Cook the pasta according to the directions on the package.
  2. Drain and rinse with cold water until the pasta is no longer hot and then place in a large bowl.
  3. Meanwhile make the dressing by mixing the yoghurt, lemon juice, garlic, parsley, mustard, salt and pepper. Adjust seasonings to taste.
  4. Add the capsicum, corn, tuna and onion to the pasta bowl.
  5. Pour over the dressing and gently toss until well combined.
  6. Serve immediately or refrigerate and serve chilled.
