Tuna Pasta Salad Recipe

- 8 oz uncooked pasta, such as rotini
- 6,5 oz cans tuna, drained
- 1 cup corn, thawed
- 1 cup diced red capsicum
- ½ cup diced red onion
- ⅔ cups plain Greek yogurt
- ¼ cup fresh lemon juice
- 1 teaspoon Dijon mustard
- 2 garlic cloves, minced
- 3 teaspoons minced parsley
- Salt and pepper, to taste
- Cook the pasta according to the directions on the package.
- Drain and rinse with cold water until the pasta is no longer hot and then place in a large bowl.
- Meanwhile make the dressing by mixing the yoghurt, lemon juice, garlic, parsley, mustard, salt and pepper. Adjust seasonings to taste.
- Add the capsicum, corn, tuna and onion to the pasta bowl.
- Pour over the dressing and gently toss until well combined.
- Serve immediately or refrigerate and serve chilled.
