CARAMEL APPLE BLONDIE CHEESECAKE - The best Caramel Apple Blondie Cheesecake of your dreams! This delicious cake is perfectly moist and has cinnamon apples infused in each and every bite!
Ingredients
For the apple Blondie:
½ cup butter, melted
1 ½ cup brown sugar
2 eggs
2 teaspoon vanilla
½ teaspoon cinnamon
½ teaspoon apple pie spice
½ teaspoon baking soda
½ teaspoon baking powder
Pinch of salt
1½ cup flour
1 cup apple, peeled, cored and chopped
For caramel sauce:
¼ cup butter
½ cup brown sugar
5 tablespoons heavy cream
For caramel cheesecake:
16 oz cream cheese, softened
1 cup brown sugar
½ cup caramel sauce
½ teaspoon apple pie spice
4 oz Cool whip
For cinnamon apples:
2 cups apple, chopped
2 teaspoon lemon juice
1 teaspoon cinnamon
1 tablespoon butter
4 tablespoon brown sugar
For whipped cream:
½ cup heavy whipped cream
¼ cup powdered sugar
Instructions
To make apple Blondie:
Preheat oven to 350 degrees. Line the bottom of 9 inch springform pan with parchment paper and grease the sides
In a large bowl, beat together butter and brown sugar until combined
Add eggs one at the time, vanilla, cinnamon, apple pie spice, baking soda, baking powder and salt and whisk until combined
Slowly add flour and stir just until combined
Fold in chopped apples and gently stir together
Spread batter into prepared springform pan
Bake for 30-35 minutes or until toothpick inserted in the center comes out clean
Remove from oven and let cake cool completely
To make caramel sauce:
In a small sauce pan melt butter, whisk in brown sugar and heavy cream, stirring constantly until fully dissolved
Bring in the boil and boil for about 3 minutes
Allow to cool completely
To make caramel cheesecake:
In medium bowl, mix cream cheese and brown sugar until smooth and creamy
Add apple pie spice, caramel sauce and cool whip and mix until combined
Spread cream cheese mixture evenly on top of Blondie
Set in the fridge to firm
Refrigerate for at least 3-4 hours
When the cheesecake is set and cooled run a thin knife around the sides and remove the springform pan sides
To make cinnamon apples:
In a medium sauce pan combine brown sugar, lemon juice and cinnamon
Add chopped apples and toss to coat
Add butter and cook on medium-high for about 15-20 minutes until soft
Cool and then place on top of the cheesecake
To make whipped cream:
In a medium bowl, beat together heavy cream and powdered sugar until stiff peaks form
Transfer whipped cream to a piping bag
Pipe whipped cream around the edge of the cheesecake and drizzle caramel sauce over the top, if desired
Store cheesecake in the refrigerator
