Healthy Banana Oat Greek Yogurt Muffins with Chocolate Chips Recipe

HEALTHY BANANA OAT GREEK YOGURT MUFFINS with CHOCOLATE CHIPS - Healthy, Easy muffins made in a blender! No butter, oil and no flour! A perfect way to start your day!
  • 2 medium ripe bananas
  • 2 eggs
  • 1 cup Greek yogurt, plain
  • 2 cups rolled oats
  • ¼ cup brown sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ cup mini chocolate chips
  • Mini chocolate chips, optional for the sprinkle
  1. Preheat oven to 400 degrees. Lightly grease a 12 cup standard muffin pan or line with paper liners (if using the , lightly grease them as well), set aside
  2. In a blender or food processor add bananas, eggs, Greek yogurt, rolled oats, brown sugar, baking powder, baking soda and process on high until the oats are broken down and the batter is smooth and creamy
  3. Stir in mini chocolate chips
  4. Pour batter into prepared muffin pan, fill each muffin pan until it is ¾ full
  5. Sprinkle with chocolate chips over the top of each muffin
  6. Bake for 15-20 minutes, until a toothpick inserted in the center comes out clean
  7. Place the pan on a wire rack and let the muffins cool for 10 minutes
  8. Remove from the pan and enjoy
