Valentines Red Velvet Sandwich Sugar Cookies Recipe

VALENTINES RED VELVET SANDWICH SUGAR COOKIES – Two red velvet sugar cookies are sandwich with cream cheese filling and topped with cute Valentines sprinkles! Easy and adorable Valentine's Day treat!
For red velvet cookies:
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon red food coloring
  • 1 egg
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 3 cups all-purpose flour
For cream cheese filling:
  • 4 oz cream cheese, room temperature
  • 2 tablespoons unsalted butter, room temperature
  • 1 cup powdered sugar
  • Valentine's sprinkle, optional
To make cookies:
  1. Preheat oven to 350°F. Prepare baking pans with parchment paper or silicone baking mats
  2. In a large bowl mix together all-purpose flour, baking powder and salt, set aside
  3. In a medium bowl mix together butter and sugar until smooth, at least 2 minutes
  4. Add egg, vanilla extract and red food coloring and beat
  5. Slowly add in the flour mixture a little bit at a time until the dough is fully combined (if dough becomes too stiff for your mixer turn out the dough onto a countertop surface, wet your hands and finish off kneading the dough by hand)
  6. Divide the dough into two parts and roll each portion out to ¼ inch thickness
  7. Take one part of the dough and cut into heart shapes using a cookie cutter, transfer the cookies to the prepared baking sheet then using a smaller heart shaped cookie cutter and cut smaller hearts into centers of half of the hearts
  8. Remove the smaller hearts and re-roll the remaining dough, continue cutting until all dough is used
  9. Bake for 6 to 8 minutes. Let cool on the cookie sheet until firm enough to transfer to a cooling rack
To make filling:
  1. Mix together cream cheese and butter until fully combined
  2. Slowly add powdered sugar until fully combined
  3. Spread cream cheese filling over whole hearts then place cookies with heart cut centers over tops
  4. Sprinkle with Valentines sprinkle
Servings: 16 sandwich cookies
The recipe yield will vary according to how thick you roll your cookies and how large or small your cutters are
If you must chill the dough just leave it on the countertop for 10 minutes before rolling or work the dough with your hands for a few minutes
