No Bake Lemon Cream Pie Recipe

NO BAKE LEMON CREAM PIE – Sweet, tart and incredibly easy pie, full of lemon flavor! This is definitely a refreshing, super delicious creamy dessert!
For Graham Cracker Crusts:
  • 1 ½ cups graham cracker crumbs
  • 6 tablespoons unsalted butter, melted
  • ¼ cup of sugar
For Lemon Cream Filling:
  • 2 cups sweetened condensed milk
  • 8 oz Mascarpone cheese
  • ½ cup powdered sugar
  • 1 cup heavy whipping cream
  • ½ cup fresh lemon juice
For Topping:
  • 1 cup heavy whipping cream
  • ½ cup powdered sugar
  • Fresh lemon slices, optional
  1. Spray 8 inch pie plate with non-stick spray, set aside
To make crust:
  1. In a medium bowl, combine crushed graham crackers, butter and sugar and stir
  2. Press mixture into bottom and up the sides of pie plate, press hard to compact (you can use a glass to press the bottom, but use your fingers to press the sides)
  3. Place in the freezer while you make filling
To make lemon cream filling:
  1. In a medium bowl, mix Mascarpone cheese and sugar until smooth and creamy, set aside
  2. In separate bowl whip heavy cream until soft peaks form add lemon juice and continue mixing until stiff peaks form
  3. Add Mascarpone cheese mixture into beaten heavy cream and mix on low speed just to combine
  4. Slowly add condensed milk and beat until well mixed
  5. Pour lemon cream mixture into prepared pie plate and refrigerate for at least 6 hours or until firm
To make topping:
  1. Beat heavy cream and powdered sugar together in a mixer until stiff peaks form
  2. Spread or pipe the whipped cream on top of the cooled pie, add some lemon slices, if desired
  3. Serve
