  • 1 cup heavy whipping cream
  • 1 ½ cup cottage cheese
  • 1-2 teaspoon liquid stevia (optional)
  • 1 teaspoon ground cinnamon
  • ½ teaspoon vanilla powder (vanilla extract)
  • 2 oz fresh blueberries (or other berries)
  1. Whip the heavy cream until soft peaks form. Add vanilla powder and stevia.
  2. With a spoon add cottage cheese and mix gently until combined, but not overmixed.
  3. Sprinkle with cinnamon and let the pudding settle about 10 minutes in the refrigerator.
  4. Serve with blueberries.
