These cute Valentines Vanilla Shortbread Cookies are perfect recipe idea to make for him this Valentine’s Day! 5-ingredient, easy, cute and delicious, buttery heart shaped sandwich cookie with a jam filling that melts in the mouth!
Ingredients
1 cup unsalted butter, softened
½ cup confectioners’ sugar and more for a sprinkle
In a large bowl, using an electric mixer with a paddle attachment on medium speed, beat butter, confectioners’ sugar and vanilla sugar (vanilla extract), until fluffy.
Add flour gradually, beating at low speed, just combined.
Divide the dough in half, and wrap each half in plastic wrap. Refrigerate for minimum 2 hours.
Preheat oven at 300 F and prepare a baking sheet with parchment paper.
Roll out the dough on a lightly floured surface, to ⅛-inch thickness. Cut out cookies using heart shaped cookie cutter (the bigger one, about 2 or 3 inches). Place cookies at cookie sheets, about 1 inch apart.
Bake at 375F up to 10 minutes, or until edges start to get lightly brown.
Meanwhile, cut out more cookies, and cut out their centers with 1 ¼ - 1 ½ cookie cutter (to make top-layers). Repeat, rerolling scraps, until you spend the whole dough.
Take out cookies of the oven, leave on baking sheet 1-2 minutes and cool completely at the cookie rack.
Sift confectioners’ sugar over cookies.
Spread jam on each plain cookie and top with cut-out tops.
