  • 1 large head of cauliflower
  • 2 eggs
  • 1½ cup sour cream
  • Salt and pepper to taste
  • 1 cup grated Ricotta cheese (for on top)
  • ½ cup parsley
  1. Rinse the cauliflower and cut it up into florets.
  2. Bring a medium pot of water to the boil. Once it boils rapidly, add the cauliflower florets and boil for 5 minutes.
  3. While the cauliflower boils, in a medium bowl, add eggs, sour cream, salt, pepper and whisk together.
  4. When the cauliflower is cooked, use a slotted spoon the florets and scoop into a baking dish.
  5. Pour the sauce on the top, sprinkle with cheese.
  6. Preheat oven to 400 F.
  7. Bake about 10-15 minutes.
  8. Garnish with fresh parsley, if desired.
