First, you need to cut the pork into pieces. After the cutting task takes a bowl mix pork pieces, paprika, black pepper, white pepper, sugar, and garlic. Mix all the ingredients well and then divide the mixture into two parts. After this, put one part in the food processor and process it well. Repeat the same procedure for the other part. Next day, add vinegar or wine to the meat and mix it well when you are done with the mixture. After this smoke the sausage for an hour in a preheated smoker.
Recipe # 2

- Pork
- Garlic cloves
- Black pepper
- Red pepper
- Paprika
- Vinegar
- Salt
- Coldwater
Preparation Method
Like the first recipe, mix all the ingredients in a bowl and make a mixture. Cut the pork in small pieces. After preparing a mixture, cover the bowl with a plastic wrap and refrigerate the pot for two days. After two days, take out the pork mixture and stuff the mixture in casings. You should not overstuff the casings. After stuffing the mixture and preparing casing, hang them into the air in order to dry them. Though this recipe is a little time-consuming, you would amaze how it tastes.
Both recipes are simple and easy, and one can prepare them without putting extra effort or spending extra money. One more thing that I want to share is if you don’t have a smoker these can be prepared in the oven.
