- 1 ½ cups of brown basmati rice.

- 2 1/4 cups of water.
- 1 teaspoon of lime zest.
- 2 tablespoons of lime juice.
- ½ cup of chopped cilantro.
Pineapple sauce:
- ½ diced pineapple.
- ½ diced red onion.
- ¼ cup of chopped cilantro.
- 2 minced cloves of garlic.
- ½ diced Serrano pepper.
- Juice of a lime.
- Salt, pepper, and cumin to taste.
- Corn Tortillas.
Toppings:
- Sour cream.

Shrimp:
