- 12 Lotus Biscoff cookies, crushed
- 1 ½ cup heavy whipping cream
- 1 cup Lotus Biscoff spread
- ½ cup Lotus Biscoff spread
- Finely crush the Lotus Biscoff cookies in a food processor to crumble and divide evenly between individual serving serving glasses or bowls, press down with a spoon or the bottom of a small cup.
- In a large mixing bowl, use an electric mixer to whip the heavy cream on medium speed until stiff peaks form
- Add Lotus Biscoff spread and mix on medium speed until well combined and very smooth
- Spoon the Biscoff mousse into serving glasses or bowls
- Place ½ cup Lotus Biscoff spread in a microwave safe bowl and heat in the microwave until very melted about 20-30 seconds then pour spread over the top
- Refrigerate for at least 1-2 hours to allow the mousse to set
