- Using the cling film, draw the prosciuttos around the beef fillet, tightening both the beef fillet and prosciuttos together.
- Roll out the pastry and chill the fillet.
- Use the flour to dust your work surface, then roll out a third of the 500g pack of pastry on a non-stick baking sheet. Create an 18x30cm strip out of the roll.
- Create a 28x36cm strip for the rest of the puff pastry.
- Remove the cling film from the beef fillet and put the fillet on top of the smaller strip.
- Mix 2 egg yolks with 1 tablespoon water and use it to brush the pastry’s edges and the fillet.
- Use the rolling pin to lift the larger pastry and drape it over the fillet, making sure that you press it well against the fillet’s sides.
- Trim the pastry to a 4 cm rim and seal the rim with a spoon handle.
- Cover the fillet more with egg yolks and mark the Beef Wellington with long diagonal lines while avoiding to cut the pastry.
- Chill it for at least 30 minutes and then heat the oven again for gas 6, 200C, and fan 150C.
- Brush the Beef Wellington with more egg yolks and cook it for around 25-30 minutes. Then, leave it for 10 minutes before you can serve the Beef Wellington in thick slices for the whole family.
2. White Chocolate Fortune Cookies
