Ingredients

  • 1 cup Mahatma basmati rice
  • 2 cups whole milk
  • 2 cups water
  • 1 tbsp lime zest
  • 2 cinnamon sticks
  • 1 ½ cups sugar
  • 1 ½ cups raisins (optional)

Instructions

  1. Rinse your basmati rice thoroughly until the water runs clear.
  2. Add your water to a medium saucepan and bring to a boil.
  3. Pour in rinsed rice, reduce heat to a simmer, and cook for 15 minutes, uncovered.
  4. Add milk, cinnamon sticks, sugar, and lime.
  5. Return to a simmer.
  6. Stir every few minutes and continue to cook for an additional 15 minutes.
  7. When rice is done and has a firm and creamy texture, remove cinnamon sticks and serve.

** Some people prefer to eat their Arroz Con Leche cold. In that case, your dish should be refrigerated for at least 30 minutes before serving. **
