When it comes to normal s’mores, I can take them or leave them. But these S’mores Fudge Bars with Homemade Marshmallow Topping are a completely different kettle of fish. I just cannot get enough of them.
Growing up, s’mores were part of nearly every summer gathering. Whether a picnic at a local park or around a campfire, out in the wilderness, my mom would pack the graham crackers, marshmallows and Hershey bars. We would all look forward to the campfire dying down so we could make those gooey sweet marshmallows treats.
But to be truthful, I would have rather eaten a couple of graham crackers and half a chocolate bar. Now as an adult, I have thrived to take a normal S`mores and make into something truely heaven. Now, these I cannot resist. I`ve come across S’mores cookies, pies, even dips, but this S’mores Bars recipe is a delicious twist on the classic campfire dessert.
These S’mores Fudge Bars with Homemade Marshmallow Topping would be a magnificent treat for Memorial Day, the Fourth of July or Labor Day. But I can’t wait for a holiday to make these gems and indulge myself.
Let’s start this incredable recipe by putting the graham crackers, sugar, and salt in the bowl of a food processor and pulse until finely ground or if you don’t have a food processor, put the ingredients into a bag and crush with a rolling pin. Add the melted butter and pulse until the mixture is moist or mix by hand. Press the mixture into the bottom of a prepared 8inch x 8inch baking pan. Pop in the fridge to firm up.
How to Make S’mores Fudge Bars with Homemade Marshmallow Topping
Let’s start this incredible recipe by putting the graham crackers, sugar, and salt in the bowl of a food processor and pulse until finely ground or if you don’t have a food processor, put the ingredients into a bag and crush with a rolling pin. Add the melted butter and pulse until the mixture is moist or mix by hand. Press the mixture into the bottom of a prepared 8inch x 8inch baking pan. Pop in the fridge to firm up.
In a small medium-sized saucepan, heat the condensed milk. Remove from heat and add the chocolate chips to the condensed milk. The mixture should be completely melted, thick, and smooth and of a stirring consistency. Pour over the cracker base and smooth out. Place back into the refrigerator to firm up again.
Now combine the sugar, syrup, water and salt in a small saucepan and bring the mixture to a boil and continue to cook until a sugar thermometer reads exactly 240°F. This temperature is very important. Take the saucepan off the heat and let the bubbles subside.
In the bowl of an electric mixer fitted with the whisk attachment, whisk the egg whites and cream of tartar until soft peaks form. Turn the mixer down to low speed and carefully pour the syrup slowly onto the whisked egg whites. Once all the syrup has been added, turn up the mixer to medium-high and whisk until the mixture is thick and glossy and resembles marshmallow. This should take approximately 7 minutes. Add in the vanilla and whisk until well combined.
Spread the marshmallow over the chocolate fudge layer and smooth out the layer. Use a kitchen blow torch to gently brown the marshmallow layer until lightly golden. or you can place the pan under the grill and lightly brown for a minute or so.
Place into the fridge to finish cooling for around an hour before cutting into squares and serving.
- 35 graham crackers
- ¼ cup white sugar
- ½ tsp salt
- 12 tbsp melted unsalted butter
- 2 cups chocolate chips
- 1 (14 ounces) can sweeten condensed milk
- 2 large egg whites
- ¼ teaspoon cream of tartar
- ¾ cup granulated sugar
- ½ cup light corn syrup
- ¼ cup water
- ¼ teaspoon salt
- 1½ teaspoons vanilla extract
- Melted chocolate for decoration
- Place the graham crackers, sugar, and salt in the bowl of a food processor and pulse until finely ground.
- Add the melted butter and pulse until the mixture is moistened.
- Press the mixture into the bottom of the prepared baking pan. Bake for 10 minutes. Remove to a cooling rack and let cool completely.
- In a small saucepan set over medium-low heat, combine the chocolate chips and condensed milk.
- Heat until the mixture is melted, thick, and smooth, stirring constantly.
- Pour over graham cracker crust. Place in the refrigerator while making the marshmallow topping.
- In the bowl of an electric mixer fitted with the whisk attachment, beat the egg whites and cream of tartar until soft peaks form.
- Meanwhile, in a small saucepan set over medium-high heat, combine the sugar, corn syrup, water, and salt.
- Bring the mixture to a boil and continue to cook until a candy thermometer registers exactly 240°F and remove from heat.
- Turn the mixture on low speed and carefully and gradually drizzle the syrup into the egg whites.
- Increase speed to medium-high and beat until the mixture is thick and glossy and looks like marshmallow fluff, about 7 minutes longer. Add in the vanilla and beat until combined. Spread the marshmallow topping evenly over the chocolate fudge layer.
- Use a kitchen torch to gently torch the marshmallow layer until lightly golden. Alternatively, place the pan under the broiler and broil for 1 minute, or until lightly golden.
Refrigerate the pan for at least 1 hour before cutting into squares and serving.
The squares can be stored in an airtight container in the refrigerator for up to 5 days.
