1. Easy French Onion Soup
We need the below ingredients
- 4 tbsp. butter
- 3 large white onions, thinly sliced into half moons
- 2 tbsp. all-purpose flour
- Kosher salt
- Freshly ground black pepper
- 1/2 c. white wine
- 2 c. low-sodium chicken stock
- 4 c. low-sodium beef stock
- 8 sprigs fresh thyme, plus more for garnish
- 8 baguette slices
- 1 c. grated Gruyère
Making Process:
- In a large pot, melt some butter in the middle heat. Add onions and cook, stirring slowly, until deeply golden for 25 minutes. Add some flour and cook for 1 minute. Season with salt and pepper, then add white wine and let simmer until evaporated, for 3 minutes. Add chicken and beef stocks, thyme and boil those. Reduce heat to medium and simmer for 15 minutes. Season with salt and pepper and remove thyme.
- Preheat the broiler to high heat. Place 2 baguette slices on a large baking sheet and top each slice with 2 tablespoons of cheese. Place under the broiler until the cheese is bubbling and golden brown, for 1 minute.
- Serve soup in bowls or large mugs with baguette slices on top. Garnish with a thyme sprig to look beautiful.
2. Gougères (Cheese Puffs)
We will need:
1/2 c. water
4 tbsp. butter
1/2 tsp. Kosher salt
1/2 tsp. granulated sugar
1 tsp. freshly ground white pepper (optional)
1/2 c. all-purpose flour
2 large eggs
1/2 c. freshly grated Gruyère, plus more for topping
The process is:
- Preheat the oven to 400° and place a baking sheet with parchment paper.
- In a medium saucepan, add water, butter, salt, sugar, and white pepper, and bring to a boil. Add the flour and stir with a wooden spoon until a smooth dough forms. Continue to cook until dough forms a ball, and a film develops on the bottom of the pot, about 2 minutes.
- Transfer batter to a piping bag or use a small (2 teaspoon capacity) cookie scoop to create small, inch-wide mounds on a prepared baking sheet, after one inch from each other. Top with more gruyere and bake until puffed and golden, 20 to 25 minutes.
3. Ratatouille
Necessary ingredients are:
- 1 whole white onion
- 1 large japanese eggplant
- 1 large zucchini squash
- 1 bell pepper
- 2 medium tomatoes (tomatoes on the vine)
- 2 large cloves garlic
- 2 sprigs thyme
- olive oil
- salt and pepper
The making process is:
- In a large saucepan or pot, warm enough olive oil to coat the bottom of the pan. Warm over low heat. In the meanwhile, chop your onion into small chunks. Add the onion to the pot to cook until tender – about 5 minutes.
- While the onion cooks, chop your other veggies. Remove both ends from both the eggplant and the squash; cut each into cubes. Cut a medium dice on the bell pepper and tomatoes. For the garlic, simply peel the skin, slightly smash with your knife and cut into a rough chop.
- Once the onions are tender, add the garlic and sauté for 30 seconds. Add all the veggies to the pot. Add a generous pinch of salt and a light pinch of pepper. Add the thyme. Cook it for 40 minutes.
4. Sole Meunière
Ingredients:
- 1 filet of dover sole
- pinch of salt and pepper
- 2 tbsp milk
- 2 tbsp all-purpose flour
- 3 tbsp unsalted butter, divided
- juice of 1/2 a lemon
- parsley, to garnish
The cooking process is as below:
- Rinse fish under cold water, then pat dry. Sprinkle with a pinch of salt and pepper.
- Pour the milk into a large, shallow bowl. Pour the flour onto a large dinner plate. Dip both sides of the fish in the milk, then transfer to the flour. Rub flour into both sides of the fish. Shake off excess flour.
- Melt 1 1/2 tablespoons of the butter in a pan over medium high heat. Cook the fish on the first side for 2 1/2 minutes. Then flip over and cook for another 1 1/2 minutes.
- Remove the fish from the pan. Pour out the butter and rinse the pan under water. Add the remaining 1 1/2 tablespoons of butter and melt over medium heat. Then add the juice of the lemon and give the pan a swirl. Remove the pan from the heat.
5. French Toast
The ingredients are:
- 1 or 2 slices of bread, cubed (just fill your cup to overflowing a bit)
- 1 tbls butter
- 1 egg
- 3 tbls milk
- Dash cinnamon
- Drop of vanilla extract
The cooking process is:
- Cube bread.
- Melt butter in a cup for a few seconds in your microwave. Swoosh it around the cup.
- Add bread to the cup.
- In a separate cup, combine the egg, milk, cinnamon, and vanilla. Stir.
- Pour the liquid over the bread. Smoosh it a little and allow the liquid to soak into the bread.
- Start with one minute, then add ten seconds at a time until it’s cooked to your liking (no runny eggs). In my microwave that’s 1 minute, 20 seconds. Add syrup if needed.
