Zesty Kits’ Vegetarian Pot Pie Recipe (To Serve 2 People)

Ingredients
Pinto Beans – 220gr
Carrots – 100gr
Celery Branch – 70gr
Onion – 1 whole
Parsley – 2gr
Polenta – 180gr
Vegetable Stock – 1 cube
Firstly, wash all fresh ingredients and then turn on the oven to broil. Put a pan of water to boil. Dice the carrots, celery and onion into small cubes.
Take a large pot or wok and put it on medium heat. Add a good splash of oil and drop in half a spoon of salt. Once it heats it, cook the diced carrots, celery and onion for about 5 minutes. Rinse off the pinto beans in a strainer before adding them to the pot. Cook for an additional 3 minutes and then remove the vegetables and the beans from the pot into a small dish and set aside.
In the small pot you just used for the veg, add a knob of butter, and 1 tsp flour. Mix together and cook for 1 minute before adding in 1 cup of milk. Stir until the sauce is thick and then add a cube of vegetable stock – whilst the mix.
Add the pinto beans and vegetable mix to the sauce and cook for a further 5 minutes. Then, transfer the mixture into an oven dish.
By now, the water should be boiling nicely. Slowly stir in the polenta. Use a whisk to keep it moving constantly to stop it from becoming lumpy. Once the mixture is smooth and creamy (after about 3 minutes) pour the polenta over the pot pie filling which is now inside the oven dish.
Put in the oven and cook at broil for 5 – 6 minutes or until it looks crisp and golden. Keep an eye on the oven to make sure that the pie does not burn.
Cut some parsley (stalks and all) into small pieces. Serce the pie with fresh chopped parsley on top to garnish.
