In many parts of the world, this is made with noodles. But making it with wild rice adds a layer of flavor and is much better tasting. Once you have all the elements, you must prepare the wild rice as per the direction on its package.
While preparing the rice, you must take a separate pot and begin melting 1 tbsp of butter. To soften the butter, ensure that the pot is on medium heat.
While the butter is melting, toss in the onion, carrots, and celery and saute them for about three to four minutes on medium heat.
After three to four minutes, add a few garlic cloves and saute all the veggies for thirty seconds.
Now, you will see butter turning brown at the pot’s base. At this point, add chicken broth, thyme, marjoram, sage, rosemary, and black pepper, and season them with salt as per your taste. You have to bring the mixture to a simmer, but before that, it is essential to add chicken to it. If the chicken breasts are thick, you might have to open the lid and flip them.
Cover the pot lid, switch the heat to low, and let it simmer for ten to twelve minutes until the chicken is cooked well.
After the pot has simmered, remove the chicken, set it aside on a board, and chop it into bite-sized pieces or as per your preference. When you take the chicken out from the pot, do not switch off the heat for a while and let it stay on the stove on low heat.
For the next step, you would need a saucepan. Add 5 to 6 tbsp of butter and some flour to the pan on medium heat. You have to whisk this mixture constantly for about two minutes. Add milk to the butter and wheat mix, but while doing so, you must not stop whisking the mixture, and the milk must be poured into the pan slowly. You have to whisk the mixture until it thickens.
Take the rice you had set aside, the shredded or chopped chicken, and the butter-milk mixture into the soup pot. If you want to add some acidic or zest to the whole dish to bring out a contrasting flavor, you can add lemon zest.
Stir the pot for a couple of minutes, switch off the heat, and serve your chicken and wild rice soup with garlic bread or oregano bread.
