How To Bake Plant-Based Coffee Cake
To bake the perfect coffee cake, start by preheating your oven to 180 degrees celsius. Do this straight away to allow the oven time to heat up.
Drizzle a small amount of cooking oil into a cake tin and leave to sit on the side. Adding oil will ensure that your finished cake doesn’t get stuck to the sides of the tin.
Next you should make the coffee. This is the essence of the cake and so it’s important to only buy the best, such as the coffee sold at The Coffee Factory.
Using your coffee, make an espresso. You can brew this as strongly as you’d like depending on your preferred taste. The stronger you make the espresso, the stronger the cake will taste like coffee. It’s your choice whether you’d like a subtle or strong coffee flavour.
Once you’ve made your espresso, pour this into a large bowl, adding 200ml of plant-based milk and 170g of sugar. Give this an initial mix. Add 250g of self-raising flour and ½ teaspoon of baking powder, whisking all the contents of the bowl until blended.
Transfer the mixture into the cake tin and bake in the oven for 45 minutes. Keep an eye on your cake throughout to ensure it doesn’t burn.
How To Level Up Your Plant-Based Coffee Cake
You can take your plant-based coffee cake to the next level by pouring a shot of espresso over each slice as you distribute.
For extra flair, you could serve each guest their slice and a cup of espresso for them to pour themselves – adding to the excitement.
How To Know If Your Plant-Based Coffee Cake Is Cooked
Simply looking at your cake won’t be enough to know if it is cooked properly or not. An under- or over-cooked cake won’t taste right and it wouldn’t be suitable to serve to guests.
Once you’ve taken your cake out of the oven, place a toothpick or similar through the centre. If it is soft, this is a good sign. When you remove the utensil, check if it’s dry (be careful not to burn yourself). If it’s dry, then you can rest assured in the knowledge that you’ve made a perfect plant-based coffee cake.
How Long Will Plant-Based Coffee Cake Last?
Coffee cake will be at its best quality for up to three days if left on the side at room temperature. During this period, the coffee cake will remain soft.
If three days isn’t long enough, you can also put coffee cake in the fridge. Cover the cake with tin foil and you’ll get up to 7 days of freshness, if you can make it last that long.
