It doesn’t have to be difficult to make fresh, handmade pasta dough! However, we keep returning to handmade pasta. You only need flour, eggs, and a smidgeon of arm power to knead it all together – no food processor or expensive stand mixer necessary. And after your noodles get done, you need to simmer them for another 2-3 minutes before adding sauce – cheese and popping open that bottle of wine. It’s a lot of fun to prepare with your family and only takes a few simple materials. Of course, the fact that it’s utterly delectable helps as well. Ingredients for All-Purpose Flour
- Two cups (250 g) all-purpose flour, plus more for dusting
- One kosher salt pinch
- Two Big eggs
- Six big yolks of eggs
- One tbsp olive oil (extra virgin)

- 2 cups (250 g) ’00’ grade pasta flour, plus more for dusting
- One kosher salt pinch
- Three eggs (big)
- Five big yolks of eggs
- One tbsp olive oil (extra virgin)
Preparation
- Turn out your selected flour(s) and salt on a clean, solid work surface and form a big well in the center with your hands.
- In a medium bowl, whisk together the eggs, egg yolks, and olive oil until thoroughly blended, then pour the mixture into the well.
- Start pulling the dough together with your hands until virtually all the flour gets added. If the dough is too dry and tough to knead, whisk another egg with one tablespoon of water and sprinkle part of the mixture over the dough with your hand, repeating until the dough is easier to knead.
- Knead the dough for 7-10 minutes, or until it is elastic and smooth.
- Wrap the dough in plastic wrap and set it aside for 30 minutes to an hour at room temperature or until it does not bounce back when poked.
- Roll out the chunk of dough into one long piece on a lightly floured work surface. Then, like a letter, fold the top third down and the bottom third over that.
- Roll out the dough until it is thin. You should be able to see your hands through the dough when you lift it.
- To make the dough simpler to cut, fold the top and bottom of the rectangle together in the middle, then fold it over again. To avoid sticking, loosen or unravel the cut dough as soon as possible, and dust with a little more flour or semolina, if needed.
- Bring a big saucepan of water to a boil with plenty of salt. Stir in the spaghetti to neglect it from clumping. Cook for 2-3 minutes or 30 seconds to 1 minute after the spaghetti gets removed from the pot.
- Take a noodle out and taste it to see whether it gets done. Remove the pasta from the water once it gets cooked to your taste, saving at least 1 cup (240 ML) of the pasta boiling water.
- Stir the cooked pasta into your favorite sauce to coat, adding some of the leftover pasta water if needed to give the sauce more body and silkiness.
