1 – Lemon Parmesan Chicken
This tasty take on the classic chicken parm takes 10 minutes of prep time and 40 minutes of cooking time to prepare. You’ll need the following ingredients:
- ¼ cup fresh basil
- 1 sliced lemon
- ⅔ cup chicken broth
- 1 cup heavy cream
- 2 cups baby spinach
- 2 minced cloves of garlic
- 1 tbsp. butter
- 2 tbsp. extra-virgin olive oil
- 3 boneless skinless chicken breasts
- ½ cup all-purpose flour
- ¾ cup freshly grated parmesan
- 1 tsp. garlic powder
- Zest of ½ lemon
This seems like a lot of ingredients, but this is really a quick and easy chicken recipe. Your first step is to combine the flour, garlic powder, lemon zest, and ¼ cup parmesan on a large plate. Dredge the chicken through the mixture on each side to make sure it is thoroughly coated, and then put the chicken to the side.
Next, heat your oil in the skillet. Once it’s hot enough, cook each side of the chicken for 6 minutes. When the chicken is done, turn down the heat to medium and add butter and garlic. Then add spinach, chicken broth, cream, and lemon slices, with 2-3 minutes in between adding each ingredient.
Lastly, put the chicken back in the skillet and cook it for 6 minutes more, or until it’s cooked all the way through. Now all that is left is to enjoy your lemon parmesan chicken.
2 – Chicken and Rice
This simple chicken and rice recipe comes from Campbell and uses their cream of chicken soup, but you can substitute it for any brand of cream of chicken soup if there is one you prefer. Your ingredients are:
- 1 can of cream of chicken soup
- 1 ¼ pounds boneless skinless chicken breast halves
- 1 tablespoon vegetable oil
- 1 ½ cups water
- 2 cups broccoli
- 2 cups uncooked instant rice
- ¼ teaspoon black pepper
- ¼ teaspoon paprika
The first step is to heat the oil in the skillet on medium heat. Cook the chicken until browned, which should take about 10 minutes. Next, take out the chicken and put it to the side. Put the black pepper, can of soup, water, and paprika into the skillet and let it simmer.
Return the chicken to the skillet and let it cook for another 5 minutes. All that’s left is to enjoy your chicken and rice.
3 – Honey Garlic Chicken
The last recipe on this short list of quick and easy chicken recipes is a honey garlic chicken that only requires 15 minutes to make. Here are the ingredients:
- ¼ teaspoon red pepper flakes
- 3 cloves minced garlic
- 3 tablespoons soy sauce
- 3 tablespoons honey
- 2 teaspoons olive oil
- 1 ½ pounds of boneless, skinless chicken breasts chopped into ½ inch cubes
First, put the oil in a large skillet and heat it on medium. Put a little bit of salt and pepper on the chicken before adding it to the skillet for 3-4 minutes. While the chicken is cooking, mix all of the other ingredients into a small bowl to make the sauce. Add the sauce to the chicken and cook for another 5 minutes.
