Really soft, quick and spicy chicken breast with chili!
We use chicken on many different ways. My family likes healthy, quick and easy meals, and chicken is the right choice. I usually use chicken breast, but you must take care to not overdo chicken breast, because it can be very dry. So, before cooking I use one trick-marinade. This marinade consist olive oil, salt, pepper, and herbs, which depend on dish you want to cook.
The best way is that chicken breast with marinade stay in fridge for 24 hours, but if you do not have time, you must rub marinade into the meat. This way of cooking is very quick, testy, and you need only few ingredients.
- 4 boneless skinless chicken breast
- 3 tablespoon olive oil
- 1 teaspoon salt
- ½ teaspoon pepper
- 1 tablespoon chili powder
- ½ cup chicken broth
- Reheat the oven over 400F, remove chicken breast from marinade and spice it with chili powder. In the glass dish, put little oil, chicken broth, and chicken breast. Cover it with aluminum foil, and put it in oven for 15 minutes. After 15 minutes, turn the meat on the other side and return it in oven for 10 minutes, without aluminum foil.
- You can serve this dish warm or cold.
