When we are talking about healthy food, we know that we need to avoid fatty foods, especially at summer. We need to eat something refreshingly. Try to eat lots of fresh vegetables and fruits. Salads are great choice for snacks, or you can eat them like sides for lunch or dinner. There are so many salads recipes out there, but if you don’t have idea, try to make my version. My family likes this salad the most. Avocado, tomato, cucumber, corn, chickpea and cashew salad with feta cheese. Avocado is very healthy ingredient, and has 20 vitamins and minerals. You can use it on many different ways, but avocado is great like basis for many recipes.
I usually use avocado in salads, but also like sauce or dressing for main dishes. Avocado has beautiful light green color, which perfectly goes with many different vegetables like corn, tomato, cucumber and onions. Very quick and easy to make, rich flavor, perfect for every occasion. You can add feta cheese too, so you can eat this salad like light summer dinner. If you want to feel healthy and fresh, you must eat healthy meals. This salad is my healthy combination. - 2 avocados
- 1½ cup tomatoes (I used cherry tomatoes)
- 1 cucumber
- 1 cup chickpeas
- 1 cup sweet corn
- ⅓ cup cashews
- ½ cup feta cheese
- 1 red onion
- 1 lemon (juice of one lemon)
- ½ teaspoon black pepper
- 1 teaspoon sea salt
- 2 tablespoons olive oil
- ⅓ cup parsley
- Chop up all the ingredients.
- Mix all the salad ingredients together and add all to a large bowl.
- Cube feta and add to bowl.
- Toss gently so the feta and avocado don’t break up.
- Whisk together juice of one lemon, olive oil, black pepper and sea salt.
- Pour over salad.
- Enjoy.
