- 1 sheet of puff-type pastry
- 1 scoop of Icing Sugar
- A few raspberries (fresh)

- 300 milliliters of milk
- 200 grams of icing sugar

Let the cooking begin
Step 1
Heat milk in a pan till it’s about to boil.
Mix egg yolks, caster sugar, vanilla, and flour in a clean bowl.
The boiling mix should be mixed with the egg mix. Pour the full mix into the pan and let it boil until it is thicker and bubble.

Use a sieve to remove coagulated bits and let it cool under some cling film.

This stage is prepping- preheat your oven to a steady 200°C.

Place the pastry on a table covered with sugar. Cut it into 12 small pieces, 10 X 5 CMS. Line a tray with baking paper and place the bits of pastry on it. Dust the pieces with some icing sugar.

Chocolate Biscuit Cake
Ingredients
- ½ cup hazelnuts
- 2 ½ pieces unsalted butter
- 1 14 ounces box of digestive biscuits
- 1/3 cup golden syrup
- ¼ tsp salt
- 6 ounces of chocolate
- 3 tbsps. Non-sweet cocoa powder
- 1 tsp pure vanilla extract
- 1/3 chocolate hazelnut spread
- 4 ounces sweet chocolate, diced
- ½ cup of thick cream
- 1 tbsp. golden syrup
- Tiny chocolate chips
Step 1
Spread hazelnuts on baking sheet and toast till brown. Cook in 350 °F preheated oven. Allow cooling then dice.
Step 2
Butter up a pan. Mix hazelnuts and cookies in a bowl. Cook butter, salt, and syrup in a pan until butter melts. Remove from heat, stir in chocolate, vanilla, and cocoa powder. Throw in chocolate hazelnuts.
Step 3
Mix chocolate and cookies. Press them tightly in the buttered pan. Using the cling film, cover the mix and refrigerate overnight.
Step 4
Heat the cream and syrup together till it bubbles. Pour in chocolate and let it stand for five minutes, then mix till smooth. Allow it to sit until it’s smooth like pudding.

Remove cake from the fridge for approx. 45 minutes. Spread the ganache over the cake, and sprinkle tiny chocolate bits on top. J.
Chocolate Mousse
Ingredients
- Cream
- Egg yolks
- Granulated sugar
- Vanilla extract
- Bittersweet chocolate
- Sea salt
Step 1
Whip yolks and sugar in a bowl for 2 mins.
Step 2
Heat ¾ of cream on low heat until hot.
Step 3
Temper egg yolks with cream then move the mixture into saucepan.
Step 4
Cook this mixture until it thickens. Measure with a thermometer to ensure it’s cooked at 160.
Step 5
Add in chocolate and mix until it melts, away from heat.
Step 6
Pour the combination into a bowl and let it sit- stir it every ten minutes until it reaches 70 degrees.
Step 7
Whip the left-over cream until it’s hardened, then combine it with the chocolate mixture.
Step 8
Scoop and place the dessert in cups. Sprinkle grated chocolate over the mix if you wish.
