How to make brownie cookies?
Prepare: Preheat the oven to 375 F and line a cookie sheet with parchment paper or silicone mat
Mix: In a large bowl, combine the brownie mix, flour, oil, and eggs and mix until combined (the dough will be stiff)
Drop: Use a medium cookie scoop (2 tablespoons size) to scoop out dough balls onto the prepared cookie sheet, placing them 2 inches apart
Bake: Bake for 8-10 minutes

- 1 box brownie mix
- 1 cup all purpose flour
- 2 large eggs
- 6 tablespoons vegetable oil
- 8 oz semi-sweet chocolate chips
- ¾ cup heavy cream
- ½ teaspoon vanilla extract
- 1 cup candy sprinkles as desired
- Preheat the oven to 375 F and line a cookie sheet with parchment paper nor silicone mat
- In a large bowl, combine the brownie mix, flour, oil and eggs and mix until combined (the dough will be stiff)
- Use a medium cookie scoop (2 tablespoon size) to scoop out dough balls onto the prepared cookie sheet, placing them 2 inches apart
- Bake for 8-10 minutes
- Remove from oven, allow cookies to cool down on the pan for 5 minutes then transfer to a wire rock to cool fully before frosting
- Place chocolate chips in a heatproof bowl
- In a small pot on the stove over medium heat, heat the cream until starts to simmer
- Pour over the chocolate chips and let sit for 5 minutes
- Add vanilla extract and whisk to stir until completely smooth
- Let cool for 15 minutes or until it is a spreadable consistency
- Once the cookies have completely cooled, spread the chocolate ganache over top and sprinkle candy sprinkles on top
- Refrigerate if you want to frosting completely set
- Serve
