Pumpkins and Halloween are a match made in heaven, so why not enjoy them in a delicious sweet treat? Our rosemary-infused vegan pumpkin brownies make for the perfect Halloween dessert and are extremely easy to make.
Pumpkin and chocolate go together perfectly and complement each other very well, and with the aroma and essence of rosemary, you get a combination made in heaven.
Ingredients
- 2 cups all-purpose flour
- 100 grams of coconut oil
- 6 ounces of vegan dark chocolate
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 ½ cups sugar
- ½ cup aquafaba
- ¼ cup vegetable oil
- 1 ¼ cup pumpkin puree
- 1 teaspoon cinnamon
- 1 teaspoon pumpkin spice
- 1 teaspoon chopped rosemary
Instructions
- Start with preheating your oven to 160 Celsius. Grease your baking dish and set it aside before proceeding.
- Combine your dry ingredients in a mixing bowl and set it aside.
- Take another bowl, combine your sugar with your aquafaba and whisk them until your mixture becomes foamy.
- Melt your vegan chocolate alongside the coconut oil using a double boil method. Whisk the mixture slowly while the melting process is going on.
- Combine the aquafaba mixture with the vegan melted chocolate, and add in the chopped rosemary and the vanilla extract. Make sure all of them are mixed very well.
- In another bowl, you now need to mix your pumpkin puree with the vegetable oil and add in the pumpkin spice and cinnamon.
- Now you will have two separate wet mixtures, chocolate and pumpkin. Mix half of your dry mixture with the chocolate mix and half of the dry mixture with the pumpkin.
- With two separate mixtures, you now need to layer both in your baking dish.
- Put the dish in the oven for about 15-20 minutes. You can check if your brownies are fully cooked by inserting a toothpick inside the mix; a clean toothpick means that your brownies are done.
- Once done cooking, let the brownies rest and cool for some time before serving.

The beauty of these brownies is that by themself, they are a very balanced dessert, not being too sweet and giving you a perfect blend of pumpkin and chocolate with a bit of rosemary. Once cooled, you can cut them into squares and serve them just like that.
