It’s no secret how much I love cheesecake. Everything about the flavor of cheesecake completes my soul with every bite. I’ve made this Piña Colada Cheesecake so many times. When you take a bite you get a burst of juicy pineapple along with the creamy cheesecake filling. When the weather is hot, nobody wants to bake and this cheesecake is not only a no-bake recipe, but it is a cool and refreshing dessert. - Graham cracker crust
- Cream cheese
- Heavy cream
- Crushed pineapple
- Sweetened shredded coconut
- Rum extract
- Maraschino cherries
How to Make Piña Colada Cheesecake?
First of all is graham cracker crust:
- In a medium bowl, combine graham cracker crumbs, sugar and melted butter, mix until well combined
- Press crumb mixture onto bottom of the prepared 9-inch springform pan by lightly greasing the edges of the pan with cooking spray, set in the freezer to firm
The next layer is cheesecake:
- In a medium bowl, mix cream cheese and powdered sugar until smooth and creamy
- In a separate bowl, whip heavy cream until soft peaks form
- Add cream cheese mixture into the beaten heavy cream mix on low speed just to combine
- Add crushed pineapple, coconut, and rum extract and mix to low speed to combine then gently spread over the crust
- Set in the fridge to firm
- Refrigerate for at least 3-4 hours or until set
- When the topping is set and cooled run a thin knife around the sides and remove the springform pan sides
- Pipe on rings of whipped cream around the edge and top with cherries if desired
