- 2 bananas, medium ripe
- 1 cup rolled oats, old fashioned
- ¼ cup chocolate chips
- Preheat oven to 350°F. Spray a cookie sheet with non-stick spray or line it with parchment paper
- In a medium bowl, mash banana with a fork
- Add rolled oats and chocolate chips
- Mix well
- Using a medium sized spoon, drop cookie dough onto prepare baking sheet
- This cookie dough will be too sticky to roll into balls
- Place cookies 2 inches apart on baking sheet
- Bake for 15 minutes, until cookies are firm and lightly browned, then remove to a cooling rack
- Makes approximately 12 cookies.
