Cherry Coke Cupcakes are a cupcake with all the tasty flavors of cherry coke in a cupcake form! Cherry Coke Cupcakes are a fun and delicious dessert and a big hit at any party!
The combination of chocolate, the faint Coke flavor, cherry in the middle, and the cherry coke frosting on top is a sensational combination of flavors and textures.
These Cherry Coke Cupcakes are one of my favorites. They are wonderfully chocolate and the texture of their crumb is everything you look for in a chocolate cherry coke cupcake moist, soft and tender with just enough structure to hold a cherry coke frosting, and that frosting you are going to love it.
How to Make Cherry Coke Cupcakes?
- Preheat oven to 350F and line a cupcake pan with cupcake liners
- Make batter according to box direction except you need to substitute 1 cup Coke and 1/3 cup cherry liquid for water
- Fill liners 2/3 full and add 1 cherry to the middle of each
- Bake according to box directions or until a toothpick inserted in the center comes out clean
- Let them cool in the pan for 5 minutes, then transfer to wire rack and cool to room temperature
- To make the frosting:
- In a large mixing bowl, beat softened butter until completely smooth and fluffy
- Add Coke, Maraschino Cherry liquid and gradually add powdered sugar, about a cup at the time and beat until completely combined
- Add a few red food coloring drops to get the desired color if desired and whisk
- Transfer frosting to a piping bag and frost each cupcake and top with Maraschino cherry
Cherry Coke frosting is fluffy, creamy, and sweet and has such a pretty pink color. It is a simple frosting recipe but we are adding a drop or two red food coloring for a brighter color, but that is totally up to you.
What Type of Cherries do you use for Cherry Coke Cupcakes?
I used maraschino cherries, but if you had fresh you would be more than welcome to swap. I find Maraschino offers more of a cherry coke flavor since they are sweeter, but fresh cherries would work if you prefer.
How to Store Cherry Coke Cupcakes?
I store these cupcakes in the fridge they will last better in the fridge for 5 days. Make sure that you cover your cupcakes so they are protected from air in the fridge.
Can you Freeze Cherry Coke Cupcakes?
You can freeze these Cherry Coke Cupcakes. I would recommend leaving the frosting and just freeze the plain cupcakes. Allow them to fully cool and then freeze up to three months.
