These NO BAKE Strawberry Oreo Cheesecake Bars have a Golden Oreo cookie crust, a creamy cheesecake filling, and a homemade strawberry sauce on top. Easy, fun, and delicious summer dessert!
Strawberry season is here! We like strawberries because they give freshness to every recipe we add. I love making no-bake cheesecake. Since they are so simple, I can make them very quickly. I am kind of obsessed with no-bake desserts.

Golden Oreo as a crust and a topping gives it a creamy and crunchy texture that is perfect. Strawberry sauce with creamy cheesecake filling come together in harmony for a dreamy and refreshing dessert bar.
How to Make No-Bake Strawberry Oreo Cheesecake Bars?
A bit of assembly required for this recipe, but I promise it’s worth the effort! And it’s all really quite simple.
There are 3 parts to this recipe:
- Golden Oreo cookie crust
Finely crush the cookies in a food processor, add melted butter, and blend until it is all moistened
Press the crumb mixture onto the bottom of the prepared 9×9-inch square pan with aluminum foil leaving an overhang on each side for easy removal. Lightly grease the edges of the pan with cooking spray, and set in the freezer to firm while making cheesecake layer
- Cheesecake layer
In a medium bowl, mix cream cheese and sugar until smooth and creamy, set aside
In a separate bowl whip heavy cream until soft peaks form add vanilla extract and continue mixing until stiff peaks form
Add cream cheese mixture into beaten heavy cream and mix on low speed just to combine
Spread cheesecake filling over the crust
Set in the fridge to firm
- Homemade strawberry sauce layer
Combine water and cornstarch together to make a slurry and add to a medium saucepan.
Add sugar and strawberries and set over medium-high heat. Bring to a boil and then simmer for about 10 minutes. During this time the strawberries will release their juices and then thicken slightly.
Stir in lemon juice.
Use a slotted spoon to scoop strawberries out of the saucepan and spoon them on top of the cheesecake into an even layer
Can Strawberry Oreo Cheesecake Bars be frozen?
Yes! Simply freeze the bars on a plate and once frozen place them in an airtight container and keep them in the freezer for several months!
The Oreos on top probably won’t be as fresh tasting but other than that they will be delicious!
You will feel like you are getting a three-for-one dessert with every bite, and I am not sure about you, but I am here for it! Enjoy!

- 16 oz. cream cheese, softened
- 1 cup powdered sugar
- 2 cups heavy cream
- 1 teaspoon vanilla extract
- 2 tablespoons water
- 2 tablespoons cornstarch
- 2 cups strawberries , hulled and chopped small
- 1 cup granulated sugar
- 1 tablespoon lemon juice
- Golden Oreo, crushed optional

- Refrigerate for at least 3-4 hours or until set
- Combine water and cornstarch together to make a slurry and add to a medium saucepan.
- Add sugar and strawberries and set over medium high heat. Bring to a boil and then simmer for about 10 minutes. During this time the strawberries will release their juices and then thicken slightly.
- Stir in lemon juice.
- Use a slotted spoon to scoop strawberries out of the saucepan and spoon on top of the cheesecake into an even layer. Some liquid will still be in the pan once you've removed all the strawberries, discard
- Set in the fridge to firm
- When the cheesecake is completely set, pull the overhang of the foil to lift the cheesecake from the pan and transfer onto cutting board
- Cut and garnish with crushed Golden Oreo
- Serve
