- 16 oz strawberries rinsed and with tops cut off
- 1 box white cake mix
- 3 eggs
- ¾ cup vegetable oil
- 3 oz strawberry jello mix
- ¼ cup unsalted butter softened
- 4 oz cream cheese softened
- 1 teaspoon vanilla extract
- 3 cups powdered sugar
- ¼ cup strawberry puree
- Preheat oven to 350°F. Grease and flour a 9x13 inch baking pan
- Add strawberries to a blender or food processor and blending, (you will need 1 cup of pureed strawberries for the cake batter, plus an additional ¼ cup of pureed strawberries for the frosting) Set aside
- In a large mixing bowl, whisk the cake mix, eggs and oil until well combined.
- Add JELL-O powder and 1 cup strawberry puree, mix well.
- Pour the batter into a greased 9×13 prepared pan. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean
- Let the cake cool.
- While the cake is cooling, make the frosting.
- Beat together the butter and cream cheese until smooth and creamy
- Add vanilla, powdered sugar, and strawberry puree and mix until smooth and fluffy
- Spread the frosting evenly over the top of the cake and refrigerate for at least 1 hour
- Add fresh sliced strawberries on top of the cake if desired, sliced and serve
