  1. Prepare the skillet with medium heat, four tablespoons of oil, one lemon freshly squeezed for its juice, Old Bay seasoning.
  2. Cook the shrimp on both sides for 2 to 3 minutes at medium heat.
  3. Garnish with cilantro and have fresh lemon slices available for more flavor.
  4. Serve immediately.
  • Sticky Barbecue Chicken

Ingredients: 1 pound of chicken breast tenderloins (or your selected combo of wings, thighs, legs, or breasts); BBQ sauce, paprika, cooking spray

  1. Soak thawed chicken parts in BBQ sauce.
  2. Sprinkle all sides of the chicken parts with paprika before cooking.
  3. Preheat the oven to 375 degrees.
  4. Bake chicken for 30 to 40 minutes until it is thoroughly cooked. Cut open the thickest piece of chicken to verify there is no pink left in the center, or use a thermometer to ensure the thickest part’s internal temperature is at least 165 degrees.
  • Grilled Potato Salad With Chiles and Basil

Ingredients: 6-8 big potatoes, 2 cups of olive oil or regular mayonnaise, ½ cup of sweet pickle juice, 1 tablespoon of salt, and ½ tablespoon of ground pepper, ½ cup of freshly diced green pepper, ½ cup of freshly diced white or yellow onion.

  1. Bring a large pot of water to a full boil.
  2. Boil peeled or skin-on red, white, or russet potatoes for 45 to 60 minutes. Do not use baking potatoes.
  3. Use a fork to cut the thickest potato in half to check for softness.
  4. Let the potatoes cool for at least 10 minutes. Two options are soaking potatoes in a pot of cool water or running water over them in the sink.
  5. Remove any remaining potato skins if desired.
  6. Dice the potatoes.
  7. Assemble the remaining ingredients in a large bowl and then mix this mixture evenly with fully cooled diced potatoes.
  8. Grill the salad for at least 30 minutes.
  9. Add fresh chiles, basil, and paprika if desired.
