Ingredients
- 3 cans of full-fat coconut milk
- 1 package Stevia – or another sugar substitute of your choice
- 2 teaspoons of vanilla essence
- 4 drops of lavender essential oil
- ¼ cup Crushed lavender flowers
- ¼ cup mint leaves
Lavender ice cream is the perfect dessert for your summer gathering. You will need to prepare in advance to make this work. Both the ingredients and finished ice cream will need plenty of time to chill for the best results. Plan to chill your ice cream overnight.
Step 1
Begin by chilling 2 of the 3 cans of full-fat coconut milk in the fridge for at least 6 hours. It’s a good idea to leave them overnight if you have the time. Once they have been chilled you can bring them out and set them aside for now. Open the 3rd can and empty into a medium saucepan.
Step 2
Add your vanilla to the saucepan and bring to a simmer. You will only need to stir once. Too much stirring can separate the coconut milk.
Step 3
Gently simmer for 30 minutes. Keep a close eye on the mixture and remove from heat when it has thickened or halved.
Step 4
Open the two remaining cans of full-fat coconut milk. Remove the fat from the top half of each can and place it in a chilled bowl. Use a hand mixer to whip the fat for 3-4 minutes until it is light and fluffy.
Step 5
Add your condensed milk from the saucepan to the whipping bowl and mix it together with a hand mixer for 2-3 minutes.
Step 6
Add lavender essential oil to taste. Gently fold the oil into the mixture. At this point, you can add your sweetener and more vanilla if necessary.
Step 7
Transfer mixture to a baking dish with a lid and place in the freezer for a minimum of 4 hours. If you have time, keep it in the freezer overnight.
Step 8
Remove from the freezer 20 minutes before serving. Scoop into small bowls, sprinkle with lavender flowers and add a piece of mint for a garnish and serve.
